Fresh, simple, spicy!
1 ripe avocado, cut into medium chunks
Handful of cherry tomatoes, halved
5-10 mushrooms, halved or quartered (depending on size)
1/4-1/3 cup red onion, diced
1 hot pepper, sliced (optional)
1 small bunch fresh cilantro, chopped
1/2 lime (or lemon)
- Mix all the vegetables together
- Add a generous swirl of olive oil, the juice of half the lime (or lemon), a few generous dashes of your favorite curry powder, and a pinch of salt
- Toss gently (so as not to smush the avocado), and serve immediately
