This is a great summer meal — easy to throw together, and fun to eat. Marinate the seitan at least 2 hours in advance, if possible, and throw the rest together shortly before you are ready to eat. Though the prep time is long, active cooking time is actually very short.
About seitan: Seitan is a wonderful, vegan protein source, made from wheat gluten. It is high in protein, low in carbs and fat, and has a chewy, meaty texture. Like tofu, seitan has little flavor of its own, and is very versatile, as it takes on the flavors of its seasonings.
Vegan Seitan Fajitas

Ingredients
- Marinade
4 tbs tomato paste
3 tbs cider vinegar
2 tbs olive oil
3 tbs lime/lemon juice
1 tsp chili powder/paprika
2 tsp ground cumin
3 cloves crushed garlic
1 tsp garlic powder
1 tsp salt
pepper
- Other ingredients
500gm/1lb seitan, cut into strips
1 large onion, cut into slivers
3 bell peppers, cut into strips (preferably one red, one green, one yellow)
6-8 mushrooms, sliced (optional)
Scallions, cut into 1 inch pieces (optional)
Hot peppers, sliced (optional)
Instructions
- Mix together all marinade ingredients
- Toss seitan with marinade and refrigerate
- Allow to marinate at least 2 hours (or up to 24)
- When you’re ready to eat, heat a large skillet or wok and add onion and seating and cook until seitan begins to brown
- Add veggies and cook lightly
- Serve with warm tortillas, over lettuce, or over rice, with your choice of Mexican toppings (guacamole, sour cream, grated cheese, lettuce and tomatoes, cilantro, salsa, hot sauce…. you get the idea!)
