If you have a food processor, this one’s pretty easy. If you don’t, try chopping the peanuts by hand and mixing in bowl. Takes a little more muscle, but should be just as yummy!
Vegan Oatmeal Peanut Butter Cookies

minutesA vegan take on a classic cookie. Makes about 32 cookies
Ingredients
1/2 cup peanuts
3/4 cup brown sugar
1 cup natural, unsweetened peanut butter
1 cup rolled oats
1/2 cup chick pea flour (can use wheat or lentil instead)
1/2 tsp baking soda
1 tsp ground cinnamon
1 tsp natural vanilla extract
1 cup chocolate chips
2-3 tbs soy (or other) milk
Instructions
- In a food processor with a steel blade, chop the peanuts until they’re about the size you’d find in chunky peanut butter
- Add sugar, oats, peanut butter, baking soda, cinnamon, vanilla, and flour and process until mixed
- Add soy milk 1 tablespoon at a time, until the mixture is a good consistency to shape
- Add chocolate chips and pulse just until mixed
- Shape into little balls and arrange on a baking sheet lined with parchment paper
- Bake at 350 until browned on top
