Vegan Oatmeal Peanut Butter Cookies

If you have a food processor, this one’s pretty easy. If you don’t, try chopping the peanuts by hand and mixing in bowl. Takes a little more muscle, but should be just as yummy!

A vegan take on a classic cookie. Makes about 32 cookies

Ingredients

  • 1/2 cup peanuts

  • 3/4 cup brown sugar

  • 1 cup natural, unsweetened peanut butter

  • 1 cup rolled oats

  • 1/2 cup chick pea flour (can use wheat or lentil instead)

  • 1/2 tsp baking soda

  • 1 tsp ground cinnamon

  • 1 tsp natural vanilla extract

  • 1 cup chocolate chips

  • 2-3 tbs soy (or other) milk

Instructions

  • In a food processor with a steel blade, chop the peanuts until they’re about the size you’d find in chunky peanut butter
  • Add sugar, oats, peanut butter, baking soda, cinnamon, vanilla, and flour and process until mixed
  • Add soy milk 1 tablespoon at a time, until the mixture is a good consistency to shape
  • Add chocolate chips and pulse just until mixed
  • Shape into little balls and arrange on a baking sheet lined with parchment paper
  • Bake at 350 until browned on top
